Preserving the flavors and harvests of the warmer months is a great way to enjoy delicious local food throughout the year. And it’s also a great way to reduce the environmental impact of your diet, because it can eliminate much of the energy used to transport food from afar or produce it in the off-season. From canning and drying to freezing and root-cellaring, putting up food when it’s naturally cheap and abundant can make a big difference to the year-round quality and variety of your meals.
